John Raulerson, VP Quality Assurance – Firehouse Subs
John has worked 10 years in food manufacturing with Pepperidge Farm and Heinz, 17 years with Denny’s Restaurants and Firehouse Subs. He is HACCP certified, a ServSafe Instructor and a Certified Food Scientist.

9:30 – 10:15AM- Running with Scissors! The Challenges of Food Safety in 2017
Tom Ford, VP Global Food Safety – Ecolab

Tom is a noted food safety expert for the food industry. He has conducted extensive microbiological research for the industry and has published scientific papers on Listeria monocytogenes. For the past 12 years he has hosted a food safety symposium, bringing together food safety leaders of the industry to develop solutions to food safety issues specific to this industry. His work was an integral reason Ecolab was awarded the International Association for Food Protections’ Black Pearl award for food safety in 2006. Tom is an original member of the Food Marketing Institutes’ Food Protection Committee, is a three time council member of the Conference for Food protection, works closely with the National Restaurant association and remains active with these groups. He has a Bachelor of Science in Microbiology from the University of Illinois at Champaign-Urbana and a Master of Public Health from Benedictine University and is a Certified Professional for Food Safety. He is a member of the International Association for Food Protection and is a member of that organization’s Professional Development Group for Retail Food Safety. He has been involved in food safety for over 30 years.

10:30 – 11:15AM- Whole Genome Sequencing and the Food Lab: Moving Forward with Outbreak Detection
Jason Crowe – FDACS Laboratory

Jason has worked at the FDACS Bureau of Food Laboratories within the Division of Food Safety for the past 7.5 years. Starting as a bench analyst, he worked in the microbiology and molecular biology sections, and is currently a Biological Administrator managing the lab’s Molecular Biology section, Outbreak Detection program, BSL-3 Select Agent testing program, and is the PI and technical microbiological expert for the laboratory’s FDA and USDA grant programs. Jason is a member of the Association of Public Health Laboratories and recently completed their Emerging Leaders Program. Jason received a Bachelor of Science degree from Clarkson University and his Ph.D. from Florida State University.

Paul Vilches, Director Global Food Safety Systems & Quality Latin America – Hershey’s
Paul is responsible for the Quality Programs for the Latin America Hershey Plants, co-manufacturers & distributors. He also leads the Global Food Safety Center of Excellence for the Company that provide guidance and support regarding Microbiology, Allergen Management, Toxicology Assessments, Sanitation, Food Defense and Food Safety Culture worldwide. Previous to joining the Hershey Company he worked for the Kellogg Company in which he held different responsibilities in the Manufacturing, Logistics, Sales and Quality Areas.
